WGcookbook: Chicken Burger with Cheddar and Spinach (my version)…Sweet Success!!

Hello Wedlock Gisters!

After my EPIC FAIL of the Banana/Oatmeal Pancake recipe, I knew I had to redeem myself with this Chicken Burger with Cheddar and Spinach recipe ( added corn to the mix) inspired by Sole for the Soul.

As promised, here is how it turned out… along with feedback from our ‘picky eaters.

Recipe via Sole for the Soul.

“First, throw this into a food processor:

  • 4 oz. wilted spinach
  • 1/2 small onion
  • 1 clove of garlic
  • 2 green onions, roughly chopped”

My food processor was not working for some reason so I used the blender ( had to add a little bit up water though) and ended up adding baby corn to the mix.

  • 2 T. balsamic vinegar (I substituted this with Rice Vinegar)
  • 2 t. soy sauce
  • 1 t. lemon juice
  • 1/2 t. chili powder
  • 1/4 c. shredded cheddar cheese

Mix everything together with the minced chicken and season to taste.

I forgot to take a shot of the mixture before making it into patties.  Also I did not add a 1/2 c. of PANKO in the original recipe. It still came out fine but a bit softer than a normal pattie texture, so I will definitely try it with the PANKO next time.

The mixture of the garlic and onion gave it a great smell that filled the entire kitchen which definitely added to the anticipation of the final results.

So I put the patties in the oven at a temperature of 350 degrees  for about 15 mins and took them out to brown them (with a little olive oil) in a pan or skillet.  Note: A George Foreman or Barbecue Grill would probably would be fine as well.

Hmm, it looked and smelled so good!  I melted some cheddar cheese on some of the fully cooked patties. My daughter who does not really care for vegetables was hovering around the chicken burgers (complete with spinach, scallions, onions and corn) ready to take a bite!

Served it with Whole Wheat Buns, lettuce, sliced tomatoes and ketchup (of course). Threw in a corn on the comb for good measure..

Verdict: This easy recipe will definitely be added to not only our meal time-table but also it will be a welcome addition to guilt-free school lunches.

    Looks quite yummy! I just made pasta sauce with spinach and pasta for lunch this week. Added some home grown herb and it was extra flavorful. :).
