I wanted to share this great Parmesan Encrusted Tilapia recipe that was so quick and easy to make and came out so yummy!  I was inspired to recreated this dish from Daktari’s Diner via Pinterest.

The goal of #WGcookbook is to expand healthier options for family meal time choices.  Hope this process is helpful to other parents as well.

Below is a delicious low-carb dinner meal time or healthy school lunch options that is really quick and easy to make.

Recipe retrieved from Dakari’s Diner (originally from Food.com):


1/2 cup grated parmesan cheese (do yourself a favor and use fresh)
1/4 cup butter, softened
4 Tablespoons mayonnaise
2 Tablespoons lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon dried basil
1/2 teaspoon black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
pinch of table salt
2 lbs tilapia fillets
Line a broiler pan with foil and spray lightly with Pam.  Turn the broiler on to heat up.  In a small bowl mix together Parmesan cheese, butter, mayo, lemon juice and garlic.  Add the seasonings and mix well.  Set aside.
Arrange the fillets in a single layer on the prepared pan and broil a few inches from the heat for 2-3 minutes.  Turn the fish over and broil 2-3 more minutes.  Remove from broiler and cover with the Parmesan mixture on the top side only.  Return to oven and broil for about 2 minutes or until the topping is browned and the fish flakes easily.  Don’t overcook the fish!

Our version:


Mix the Grated Parmesan Cheese with a spoon of Mayonnaise, Lemon juice, Basil.  Decided to improvise and add paprika powder, Curry powder, grated Garlic (didn’t have Garlic Powder), salt/seasoning of choice.


Grease the foil paper and arrange the Tilapia on the pan and sprinkle salt to taste.


Broil the Tilapia in the oven at 400 degrees for about 15 mins (take it out before it is fully cooked).



Cook in the oven for about 15 – 20 more mins or till it starts to brown.




My new go to vegetable pre-pack from BJ’s ( 5 or 6 individual dinner pack in a $5.99 box). Microwave it for 4 mins and it is good to go!



Final results!

Definite hit in our home and will be added to the list lunch and dinner options.  Even my 7 year old daughter who doesn’t care too much for any kind of fish, asked for seconds! That is SUCCESS.
